Absolutely, You can download the ActivInspire Personal Edition for free and then download lessons on Planet (or create your own!)

My school has mimio projectors rather than actual interactive whiteboards. Will I be able to use Planet resources in the same way, or will there be limitations?

I am not quite sure what you are looking for -- what specifically do you need help with. There is a training forum, where you can ask questions about courses you have taken: community.prometheanplanet.com/.../140.aspx
There are also ActivTip videos which highlight specific features of ActivInspire and show you how to build an activity using that feature: www.prometheanplanet.com/.../activtips
